Red Onion and Cucumber Vinaigrette is flavored Japanese style with rice wine. Step away from the ordinary for the extraordinary!

Cucumbers are a good source of Vitamin C, Vitamin A. It also contains calcium and potassium. Also the green color of cucumbers indicates it is a great source of chlorophyll which is a valuable phytonutrient.


3 red onions
1 cucumber (preferably Japanese, 6 to 7 inches long)
1/2 cup rice wine vinegar


Peel and thinly slice 3 medium red onions and 1 cucumber.

Toss the vegetables with 1/2 cup rice wine vinegar and arrange on a serving platter.
