Apple Cider in Sparkling Apple Berry Mold

Sparkling Apple Berry Mold is made of unflavored gelatin with the additions of apple juice, sparkling cider and sliced berries.


2 envelopes unflavored gelatin
1/3 cup sugar
1/2 cup apple juice
1 24-ounce bottle sparkling cider, warmed slightly
1 cup sliced strawberries
1 cup blueberries


Mix gelatin and sugar in small saucepan. Stir in apple juice; let stand 1 minute.

Cook 3 minutes on low heat or until gelatin is completely dissolved. Cool slightly.

Stir in sparkling cider. Refrigerate until mixture is consistency of unbeaten egg whites, stirring often.

Gently stir in fruit.

Pour into 6-cup mold.

Refrigerate at least 4 hours or until firm.

Unmold onto serving plate.

Recipe makes 12 servings.
Serving size: 1/2 cup.
