Semi Sweet chocolate mini chips nestled in a tender muffin batter make mouth watering Chocolate Chip Muffins.
2 cups flour
1/2 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup semi-sweet chocolate mini-chips
4 egg whites or egg substitute equivalent to 2 eggs
3/4 cup skim milk
1/3 cup olive oil
Heat oven to 400-degrees. Line 12 baking cups with paper liners.
Mix flour, sugar, baking powder, salt and chocolate chips.
Stir in egg whites or substitute, milk and oil just until dry ingredients are moistened. Batter will be lumpy.
Spoon batter into muffin cups 2/3 full. Sprinkle the tops of muffins with sugar.
Bake 20 to 25 minutes. Immediately remove from pan. Best served warm.
Recipe makes 12 muffins.
