English Muffin Pepperoni Pizzas is super simple but super delicious - single pizzas made on English muffins topped with pepperoni.
3/4 cup pizza sauce
6 halved English muffins
1-1/2 cup shredded Mozzarella cheese
3 ounces sliced pepperoni
Spread the pizza sauce on each muffin half.
Sprinkle cheese over sauce and top with pepperoni slices.
Place prepared muffins on baking sheet. Bake in preheated 425-degree oven for five minutes or until the cheese is melted.
Allow to rest one or two minutes before serving.
Recipe makes 12 servings.
Bonus Budget Recipe: English Muffin Veggie Pizza
1 cup cooked chopped broccoli
4 whole (8 halves) English muffins
1 cup pizza sauce (or spaghetti sauce)
1/2 cup Mozzarella cheese, shredded, part skim
3 tablespoons shredded carrots
1 teaspoon grated Parmesan cheese
Cut the broccoli to make 1 cup of chopped broccoli. Put the broccoli in a saucepan with water. Cook on medium until tender. Drain the water from the saucepan. Let the broccoli cool.
Cut 4 English muffins in half. Toast the 8 muffin halves. Shred the mozzarella cheese to make 1/2 cup of shredded cheese. Peel and shred the carrots to make 3 tablespoons shredded carrots. Spoon 2 tablespoons pizza sauce over each English muffin half. Sprinkle 1 tablespoon shredded mozzarella cheese on top of each half. Put 2 tablespoons broccoli and 1 teaspoon shredded carrots on top of each half. Sprinkle each half with 1 teaspoon grated parmesan cheese. Toast in the toaster oven for 2 minutes, until the cheese melts.
