Mashed Potatoes with Artichoke Hearts


Whip up your next batch of mashed potatoes with the addition of canned artichoke hearts.


6 large baking potatoes, peeled and quartered
1 15-ounce can artichoke hearts, not marinated
3 tablespoons whipped butter
1/4 cup skim milk
Salt and pepper to taste


Boil potatoes for 15 to 20 minutes or until potatoes are fork-tender. Drain.

Drain artichoke hearts and puree with half of the margarine and milk. Add potatoes, remaining margarine and milk and blend until smooth. Salt and pepper to taste.
