Stir-Fry Sweet Potatoes

Stir-Fry Sweet Potatoes add a richness and unique flavor to this oriental-style dish. White potatoes can he substituted. To grate ginger, cut off the dry end and peel back the skin with a small, sharp knife. Grate the ginger, using the fine side of a hand grater, a food processor fitted with steel blade, or a small oriental hand grater, which is available at most oriental grocery stores.


4 sweet potatoes peeled, cut into 1/2-inch cubes
Canola oil, or non-stick cooking spray
1 tablespoon butter
4 cloves garlic, minced
1/2 teaspoon ginger, fresh-grated
8 green onions, trimmed, cut in half lengthwise, sliced into -1/2-inch pieces
1/2 cup low-salt vegetable stock
5–6 ozs. flank steak, chilled to slice easily, across the grain, into 1/8-in. strips
1 8-ounce can sliced water chestnuts, drained
2 cups broccoli, cut up
2 teaspoons cornstarch, mixed with 2 tablespoons water
2 tablespoon oyster sauce
1/4 teaspoon black pepper, fresh-ground


Place cubed potatoes in saucepan; cover with water. (If potatoes are to stand for any length of time, place them in a glass bowl and cover with cold water. Drain well and pat dry with paper towels before using.)

Bring potatoes to boil over medium-high heat. Reduce heat to medium and cook about 8 minutes or until potatoes are just fork tender. Drain.

Spray a nonstick wok, regular wok, or frying pan; or lightly coat with oil. Melt margarine. Stir-fry garlic, ginger, onions, and potatoes over medium heat, stirring occasionally. Add stock as you cook, stirring occasionally. It might be necessary to add more liquid, stock or water, by the tablespoon to prevent potatoes from sticking to bottom of pan.

Add steak, water chestnuts, and broccoli. Stir-fry over high heat until beef loses its color. Add cornstarch mixture, oyster sauce, and pepper. Stir to combine. Spoon mixture into bowls and serve hot.
