Rice Griddle Cakes

Take a turn from regular pancakes and try this boiled rice version of Rice Griddle Cakes.


1 cup boiled rice
1 cup flour
1 cup milk
1 tablespoon shortening
1 teaspoon salt
3 teaspoons baking powder
1 egg


To prepare griddle cakes, first mix and beat together milk, egg, salt and melted shortening.

Stir in sifted flour and baking powder. Add the rice (cold) and mix well.

Cook on hot greased griddle, turning only once.

Recipe makes 12 pancakes.

Variation: Spiced Rice Pancakes

1-1/2 cup cooked rice
1 large egg
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt

Spiced Rice Pancakes Pre-heat a non stick skillet over medium-high heat. While the skillet is warming, mix together the rice, egg, vanilla, cinnamon and salt in a bowl until well combined.

Spoon about 1/3 cup of the rice mixture onto a hot skillet. Using your spatula to flatten the ball of rice down until it is a circle and about 1/2 inch thick. Repeat until your skillet is full.

Cook about 5 minutes per side - try not to flip too soon as this can result in loose fried rice instead of rice pancakes. When cooked properly, they should be golden brown on both sides with a solid texture. Top with your preferred toppings.
