Rice Hash

Rice Hash with bread crumbs, butter and onion team up with boiled rice, mushrooms and tomatoes.


1 cup bread crumbs
1 tablespoon butter
1 tablespoon chopped parsley pepper
1 large onion, chopped
1 ounce boiled rice
1 cup chopped mushrooms
2 peeled tomatoes, chopped


Mix the tomatoes, the bread crumbs, mushrooms, and rice.

Fry the onion in the butter until it is a light brown and soft.

Next, add the bread crumb mixture and seasoning.

Mix thoroughly and simmer for one hour.

Recipe makes 4 servings.

Variation: Meat & Rice Hash

Use cold leftover meat and gravy and stew together with chopped onion. When the onion is nearly cooked (transparent), add the rice to the broth. A quarter as much uncooked rice as there is meat is a good proportion. Cook together until rice is thoroughly done. Be sure and have plenty of liquid to start with.
