Carrot Raisin Salad - healthful goodness! Carrots are nutritional heroes, they store a gold mine of nutrients. No other vegetable or fruit contains as much carotene as carrots, which the body converts to vitamin A.

Raisins are low in fat and sodium, but high in carbohydrates for a quick pick-me-up snack. 1/4 cup of dried uncooked raisins provides 1 serving from the fruit group of the Food Guide Pyramid.


4 medium carrots, shredded
2 teaspoons sugar
1/4 cup raisins
Juice of 1 lemon


In a medium bowl, thoroughly mix carrots, raisins, sugar and lemon.

Serve chilled in individual serving bowls or custard cups.

Note: This is an official 5 a Day recipe, and provides four people with more than one serving of fruit/vegetables each.
