Mango Tango Salsa is low in calories and rich in lycopene, vitamin C and other antioxidants. This recipe takes just minutes and will put those juicy tomatoes of yours to good use!
1/2 red onion
3 tablespoons cilantro
Salt and pepper to taste
1 tablespoon mustard
Dice tomatoes and mangoes.
Add one-half medium red onion, finely chopped, the juice of one lime and three tablespoons chopped cilantro. Salt (lightly) and pepper to taste.
Top with 2 tablespoons chopped onions and 1 tablespoon mustard.
This recipe makes 4 servings.
A one-cup serving of sliced mango is an excellent source of vitamin a and vitamin c plus 3 grams of fiber. In addition, mangoes provide a variety of antioxidant carotenoids like alpha-carotene, beta-carotene and beta-cryptoxanthin, which lend mangoes the sunny color of their flesh.
