Peach Ginger Salsa

Peachy Peach

Ginger is a great addition to peaches and this zesty Peach Ginger Salsa is no exception! This zippy salsa makes a great dip or add-on for summer fruits and vegetables. Or, try it on grilled pork or chicken at your next cookout.


1 cup cubed peaches (about 2)
1 cup cubed seeded tomato (about 3)
1/4 cup sliced green onions
2 teaspoons chopped fresh cilantro
2 teaspoons sugar
1 tablespoon cider vinegar
1 teaspoon minced peeled fresh ginger
1/8 teaspoon salt
Dash of fresh ground black pepper


Combine all ingredients and stir well. Chill.

Serve over poultry, pork or fish.

Slight Variation: Peach Ginger Salsa

1 cup fresh peaches, diced (or you can use frozen)
1 cup ripe tomato, seeded and diced
3 green onions, diced
2 teaspoons brown sugar
2 teaspoons apple cider vinegar
1 teaspoon fresh ginger root, minced or diced fine (keep in the freezer to easily grate it frozen)

Combine ingredients and chill before serving.
