Cherry and Jalapeno Salsa

Jalapeno Pepper

Cherry is one of America's favorite flavors while Jalapeno peppers are a favorite "hottie"! Combine these two in this delicious recipe and make one kick-butt Cherry and Jalapeno Salsa!


2 tablespoons cider vinegar
2 tablespoons lime juice
1 tablespoon sugar
1 teaspoon salt
2 tablespoons jalapeno peppers, seeded and diced
2 cups ripe Bing cherries, halved and pitted


In 1-cup glass measure, blend vinegar, lime juice, sugar and salt until dissolved.

Pour over peppers and cherries in small bowl and toss.

Recipe makes about 2 cups.

Variation: Cantaloupe-Cherry-Tomato Salsa

2 cups diced cantaloupe
2 cups quartered cherry tomatoes
1/4 cup minced shallots
Fresh ripe cherry 1/4 cup chopped fresh oregano or basil
2 tablespoons minced seeded jalapeno pepper
2 teaspoons grated orange rind
2 tablespoons orange juice
2 tablespoons lime juice
1/4 teaspoon salt
1/8 teaspoon black pepper

Combine all ingredients in a bowl; toss well. Cover and refrigerate 30 minutes.
