Apple and Carrots

Carmelized Apples and carrots spiced with cinnamon make a fantastic and healthy side dish for any pork dish.


3 medium apples
1-1/2 cup baby carrots
1/2 cup water
2 teaspoons butter
1/2 cup firmly packed brown sugar
1/2 teaspoon cinnamon


Wash apples and carrots. Remove core and chop apples into small pieces and cut carrots in half.

Place apples, carrots, butter and water in a small saucepan. Cover and cook over medium heat until water starts to boil.

Reduce heat and simmer 3 minutes; drain. Add remaining ingredients, tossing gently until combined. Heat over medium heat for 3 minutes or until sugar is dissolved and a glaze forms.
