Quick Coleslaw

Quick Coleslaw is a refreshing alternative to regular salads and what better than a healthy and quick coleslaw recipe?


3 cups chopped cabbage
2 green onions, chopped
1 medium carrot, shredded
1/2 cup fat-free mayonnaise
1 tablespoon sugar
1 teaspoon celery seed
1/2 teaspoon ground mustard


In a medium bowl, combine cabbage, onions and carrot.

Combine remaining ingredients; stir into vegetables.

Chill until ready to serve.

Recipe makes 4 servings.

Alternative: Snappy Cole Slaw

2 cups shredded cabbage
1/4 cup cider vinegar
1/4 cup water
2 tablespoons sugar
1/2 teaspoon mustard
1/4 teaspoon black pepper

Wash and shred the cabbage with a knife or grater. Put in a mixing bowl.

Bring the vinegar and water to a boil in the saucepan. Remove from heat and add other ingredients except cabbage to the saucepan. Continue to cook this mixture in the saucepan until the sugar is dissolved and hot, then pour over the shredded cabbage.

Toss. Refrigerate until chilled to blend flavors.

Note: Refrigeration is needed before serving.
