Garden Fresh Gazpacho

Bowl of Garden Fresh Gazpacho Croutons

A classic Garden Fresh Gazpacho recipe chock full of healthy garden fresh vegetables including tomatoes, cucumbers, green peppers and garlic. Basil and hot pepper sauce add a tasty finishing touch.


3 medium tomatoes, peeled and chopped
1/2 cup cucumber, seeded, chopped
1/2 cup green pepper, chopped
2 green onions, sliced
2 cups reduced sodium vegetable juice cocktail
1 tablespoon lemon juice
1/2 teaspoon dried basil
1/4 teaspoon hot pepper sauce
1 clove garlic, minced


In large mixing bowl, combine all ingredients.

Cover and chill in the refrigerator for several hours.
