Onion Soup With Madeira

A savory blend of ingredients produces an exotic Onion Soup With Madeira in this Portuguese recipe where its official name is "Sofa De Cebola A Madeirense".


2 pounds yellow onions, peeled and slivered
4 tablespoons olive oil
5 cups vegetable broth or hot water
1/4 cup golden raisins
2 teaspoons paprika
2 tablespoons finely chopped cilantro
Pinch of ground cloves
4 tablespoons Madeira (white dessert wine)
1 tablespoon chili powder
Salt or salt substitute and fresh-cracked
Black pepper to taste


In a deep soup pot, saute the onions in oil until they are soft and lightly browned. Add the broth or water, raisins, and all seasonings; cover and simmer about 40 minutes.

Stir in the Madeira at the last moment, season to taste, and serve with crusty brown bread.

Homemade Onion Soup Mix

3/4 cup instant minced onion
1/3 cup beef flavored instant bouillon
4 teaspoons onion powder
1/4 teaspoon celery salt
1/4 teaspoon sugar
1/8 teaspoon white pepper

Mix all ingredients together well, and store up to 6 months in cool, dry place. Stir before each use. Five tablespoons of the mix equals 1.25 ounce package.
