Beany Sloppy Joes make the healthiest sloppy joes ever by making them filling and nutritious with lots of fiber filled beans - and NO meat.
1 15-oz can black eyed peas, rinsed and drained
1 15-oz can kidney beans, rinsed and drained
1-1/2 cup marinara sauce
1/2 cup frozen cut green beans
1/2 cup chopped green pepper
1 tablespoon Worcestershire sauce
1-1/2 teaspoons chili powder
Whole wheat hamburger buns
In large skillet, combine black-eyed peas, kidney beans, store-bought marinara sauce, frozen cut green beans and chopped green bell pepper, Worcestershire sauce, red-wine vinegar and chili powder; mix well.
Bring to boil on medium high heat. Reduce heat to low, partially cover and simmer 12 minutes or until peppers are tender.
Spoon onto toasted whole-wheat hamburger buns.
Accompany the sandwiches with frozen hash browns and a mixed green salad.
Beans come in an amazing array of colors, shapes, and flavors. They can be traditionally or quickly prepared, depending on your preference. Canned beans are ready to use; just open and pour. Frozen beans (black-eyed peas, Great Northern, soy, and kidney beans in the frozen food section of the grocery) need a very short amount of cooking time.
