Veggie Quiche

A healthy vegetable quiche with broccoli, onion, bell pepper, reduced fat Cheddar all come together in the healthful quiche made with egg substitute.


2 cups chopped fresh broccoli
1/2 cup onion, chopped
1/2 cup green bell pepper, chopped
1 cup shredded reduced fat Cheddar cheese
1-1/2 cup skim milk
3/4 cup liquid egg substitute
3/4 cup reduced fat Bisquick Baking Mix
1/4 teaspoon pepper


Heat oven to 400 degrees. Spray a 10-inch pie pan with nonstick cooking spray.

Heat 1 cup water in a medium saucepan to boil. Add broccoli, cover and heat to boiling for about 5 minutes or until almost tender. Drain.

Mix broccoli, onion, bell pepper and cheese in pie plate. Stir remaining ingredients with a fork until blended and crumbly. Pour on top of vegetables and bake about 35 to 40 minutes or until a knife comes out clean when inserted in the center.
