Chicken Rice Salad

Brown Rice

Lean chicken breast and brown rice with lettuce and tomatoes seasoned with Italian herbs and black pepper create a hearty chicken rice salad.


4 cups lettuce
2 cups brown rice, cooked
2 cups chicken breast, skinless roasted
1 cored and diced tomato
1 cored and diced green pepper
1 tablespoon olive oil
1 juice of one lemon
2 tablespoons vinegar, flavored
Dash hot pepper sauce (optional)
Italian herb mix and black pepper to taste, (optional)


Toss all ingredients together in a large salad bowl.

Use personal taste preferences to determine the amounts of seasonings.

Serve immediately. This salad looks great when served on a large plate with a few of the seasonings sprinkled on top.

Variation: Quick Italian Chicken and Rice

Combine in a large skillet: 1 cup sliced fresh mushrooms, 1 clove minced garlic and 1-tablespoon olive oil; cook three minutes.

Add: 2 cans of (14.5 ounces) diced tomatoes with basil, garlic and oregano - do not drain - and three Boil-in-Bags rice prepared (use package directions). Cook 3 minutes on medium-high heat. Stir in cooked rice, 1-cup grated Parmesan cheese and 2-cups diced, cooked chicken; heat through.
