Black Eyed Peas

Black Eyed Peas in a bowl

Turkey bacon lends loads of flavor to these black eyed peas seasoned with just a bit of black pepper.


4 slices chopped turkey bacon
2 pounds black eyed peas, frozen
2 cups water
1/4 teaspoon black pepper
1 teaspoon sugar
1-1/2 cup dry bulgur
2 cups low sodium chicken broth


Place a pot over medium high heat and cook bacon for 3 to 4 minutes.

Add the rest of the ingredients and bring to a boil.

Reduce heat to simmer and allow to cook until the peas are tender, about 30 minutes.

Serve hot.
